Bean Dip:
Empty one 16 Ounce can of vegetarian refried beans in a microwave safe bowl. Stir in 1/3 jar of Dos Amantes Vegetarian Green Chile. Microwave, loosely covered,  (the beans may pop in the microwave and make a mess), in one minute increments, stirring in between heatings. For added flavor and smoothness, you can also add in 8 ounces of the cheese of your choice. Cream cheese gives it an interesting flavor and texture. Serve warm with corn chips.

Cheese Dip:
Start with a 50-50 mix of cheese and Dos Amantes Vegetarian Green Chile. Microwave is best to avoid burning the cheese. Heat in one minute increments, stirring between heatings. Serve hot or warm with corn chips.

El Rancho Dip:
This makes an excellent cold dip and a very robust Salad Dressing.  A good starting point is one part Dos Amantes Vegetarian Green Chile to 3 parts Bottled Ranch Dressing. Blenderize the Dos Amantes Vegetarian Green Chile then stir into the Ranch Dressing. This tastes great served hot, warm, or cold, with corn chips or potato chips, or on a cold salad.

Veggie Dip:
Mix Cold Sour Cream with warm or cold Dos Amantes Vegetarian Green Chile starting with a ratio of one part Dos Amantes Vegetarian Green Chile to 3 parts Sour Cream. You can blenderize the Dos Amantes Vegetarian Green Chile if you want a smooth dip rather than chunky. Substitute Cream Cheese in place of the Sour Cream for a different flavor and texture. A small French whip works well for mixing the ingredients.


Cold Salsa:
To make a Cold Salsa for use as a condiment or dip, add the following to one jar of Dos Amantes Vegetarian Green Chile. One 15 ounce can of Petite Diced Tomatoes, thoroughly drained, and one Small Yellow Onion peeled and chopped. Stir together and refrigerate overnight to allow the flavor to mix well with the added ingredients. Keep refrigerated. 

Enchiladas:
Use Dos Amantes Vegetarian Green Chile in place of the usual Enchilada sauce for a robust and zesty taste!

Lentils:

Soak one 16 ounce bag of lentils in cold water in the refrigerator until they double in size. Drain and rinse with cold water. Add water and lentils in a large saucepan, just enough water to cover lentils by 1/2 inch. Cover and simmer until lentils are soft. You may need to add more water from time to time depending on altitude and dryness of the lentils. Once lentils are nice and soft,boil off the remaining water, stir in ½ jar of Dos Amantes Vegetarian Green Chile, bring to boil, then remove from heat. Serve with grated cheddar, finely sliced green onions and a dollop of sour cream if desired.    

Spanish Rice:
Add ¼ jar of Dos Amantes Vegetarian Green Chile to 4 cups fully cooked white rice. Stir, heat, and enjoy!

Vegetarian Chili Con Carne:
2- 16 oz cans red kidney beans, do not drain
1 each red, yellow, and green pepper - diced
1 medium red onion diced
½ jar Dos Amantes Vegetarian Green Chile
1- 15 oz can petite diced tomato
8 0z vegetarian beef crumbles
Salt to taste if desired


Saute onion and peppers in large pan, combine all ingredients except crumbles, simmer 30 minutes, then, heat vegetarian beef crumbles in microwave according to package directions, stir crumbles into mixture, bring to simmer then remove from heat. Serve hot with warm tortillas or corn chips. Sprinkle grated cheddar and finely sliced green onions on top as a garnish if desired.
